Cinnamon (Cinnamomum cassia) is a popular spice derived from the inner bark of the Cinnamomum genus. Used extensively to flavor sweet and savory dishes, cinnamon contains natural volatile oils that give it it’s red color and robust flavor. Mexico is the main importer of this spice, where it is mixed into chocolate and mole sauces.

Cinnamon bark was revered in ancient times, so much so that it was was considered a suitable gift for monarchs and gods. Historical records reveal cinnamon was presented as a gift to the temple of Apollo at Miletus in Greece. It also has a long history of traditional use in Asian and African medicine.

Cinnamon bark is thought to work like insulin in the body, thus promoting a healthy blood sugar balance. This has not been scientifically proven, however. It also contains protective antioxidants and may reduce inflammation.
