Elderberry (Sambucus nigra), also referred to as European elder or black elder, is a small tree native to Europe, Africa and parts of Asia that produces deep black berries. These berries are the primary constituent of many popular remedies due to their numerous health-promoting compounds.

Native Americans used the entire plant, creating tools from the branches and medicine from the berries. “Sambucus” is Greek for “wind instrument” - the tree has been referred to as the “tree of music” because Native Americans used the branches to make flutes. The berries and flowers have also been used in traditional Austrian medicine for respiratory, gastrointestinal and viral issues issues and as a treatment for colds and flu. Traditional elderberry preparations include jelly, juice, syrup and tea.

Elderberries contain a special group of flavonoids called anthocyanins, which are water-soluble vacuolar pigments responsible for the red, purple and blue hues that saturate many fruits, vegetables and flowers (including the gorgeous blackened color of elderberries). These concentrated pigments are known for their free-radical fighting capabilities, and may also offer anti-inflammatory and anti-viral benefits. Elderberries are considered to have an extremely high antioxidant “capacity” for their size; it is estimated they contain 2x more antioxidants than cranberry and over double the value of blueberry.
